Risotto with roasted celery and morels, an "A l'Epicerie" recipe

Ingredients

Cream of morel mushroom from the Côtes de Provence
Morels
Celeriac
Grated Parmesan
Sweet butter
Yellow onions
White wine
Dry thyme

Preparation

To make your own Risotto with Morels and Roast Celery, first prepare your risotto and then chill it.

Set aside, collect the water from the morel mushrooms and use as a stock, adding the vegetables.

Use the stock to drizzle over the Morel Risotto with roast celery.

Prepare diced celery and roast in the oven with the butter.

Sauté the morels, heat up the risotto again with the stock and mix the risotto with the cream of morel mushrooms.

Then place the diced morels and celery on top.

When serving the plate of Risotto with Morels and Roasted Celery, add grated Parmesan cheese.
