Hake fillet with white asparagus, an "A l'Epicerie" recipe

Ingredients

560 g fillet of hake

520 g white asparagus

12 g chervil
120 g single cream 35 % 120 g Menton Lemon Parmesan Cream* (with cream)

40 g Organic* chilli and olive oil

20 g Organic* olive and lemon oil

Butter, rocket, salt, pepper

Preparation

To prepare a hake fillet with white asparagus, marinate the fillet with olive oil and organic chilli pepper for 30 minutes.

Plunge the asparagus for your Hake Fillet recipe into boiling salted water for 6 minutes. Remove from the heat and immerse immediately in boiling water.

Roast the asparagus in a foamy butter. Arrange the sauce, asparagus, hake and chervil at the bottom of the plate. Finish with a bunch of rocket with olive oil and organic lemon. Season with salt and pepper.
